Pumpkin Pie prOats

Fall is [kinda] here! My favorite season ever. The smells, the weather, the beauty. Everything about Fall is just perfect. I got home from my workout this morning and had leftover pumpkin from a recent recipe (coming soon) and couldn’t help but make pumpkin pie oatmeal. I never get sick of it! I added 2 egg whites for added protein, PLUS it makes the oatmeal super fluffy. You’re going to want to whip this up STAT.

Fluffy, protein-packed, delicious oatmeal. It tastes like Fall in a bowl!

Ingredients
  1. 1/4 cup dry steel cut oatmeal
  2. 3/4 cup water
  3. 1/4 cup pure pumpkin puree
  4. 2 egg whites
  5. Pumpkin pie spice, to taste
  6. Cinnamon, topping
  7. Pecans, topping
Instructions
  1. Add steel cut oats and water to a pot. Bring to a boil and then let simmer for 10-12 min.
  2. While it is simmering, add in your pumpkin pie spice.
  3. After about 10 min, add in your pumpkin puree and egg whites.
  4. Keep on the stove until egg whites are cooked and oatmeal is fluuuuffffyy.
  5. Transfer to bowl, top with pecans and cinnamon!
Notes
  1. You can add as much or as little spice as you would like!
  2. You can also cook your oats in milk/milk substitute for added flavor.
