I’ve been on a little baking kick this week. Carrot cake is my favorite dessert of all time. It is so rich, moist, and I love the different textures. The 7-layer carrot cake from Mitchell’s is to-die-for. Sam and I always get it whenever we go there or when we are celebrating something. I honestly don’t even know where to begin with these. I haven’t baked in awhile and I absolutely love it, so I thought these sounded easy and yummy. My expectations were not high at all, but oh. my. gosh. I think this is my best recipe I’ve ever created (other than the carrot cake cupcakes I also just made. I am on a ROLL today!). Fall is [kinda] here! My favorite season ever. The smells, the weather, the beauty. Everything about Fall is just perfect. I got home from my workout this morning and had leftover pumpkin from a recent recipe (coming soon) and couldn’t help but make pumpkin pie oatmeal. I never get sick of it! I added 2 egg whites for added protein, PLUS it makes the oatmeal super fluffy. You’re going to want to whip this up STAT.
I’m sure you’ve seen these all over social media. Smoothie bowls are a foodie trend right now, but for good reason. They are delicious and you can hide lots of veggies in them without the bitter taste! Freeze some fresh fruit overnight, throw in a blender, blitz, and serve. Happy Sunday! Sunday’s are usually my day to meal prep and grocery shop. Sam and I both are up around 5am for workouts and then immediately start our day. Coconut anything, please! It has always been my favorite flavor for everything. Coconut shrimp, coconut La Croix (obsessed), coconut body lotion, coconut ALMOND BUTTA. Totally winged this recipe and it turned into something that I have been making weekly. Sam is obsessed with it, even more than I am. And we all know how obsessed I am with almond butter. The cinnamon adds the perfect amount of spicy warmth and the pink Himalayan salt brings the flavors to life in your mouth. Who doesn’t love mashed potatoes? Especially when they have a garlicky kick! MM, they are so good and the ultimate comfort food. A lot of people, however, are trying to stay away from potatoes, including myself. So of course I found a compromise! Mashed cauliflower. Stay with me here. A muffin that won’t give you a muffin-top. Sign me up! I love muffins. Egg muffins, savory muffins, sweet muffins. They are so easy to just grab’n go. And they are the perfect size! I find that when I bake loafs, I cut myself a huuuuuge (Donald Trump voice) slice, whereas a muffin is already a perfect serving size! Lemon poppyseed is one of my favorite muffin flavors. It’s really light, airy, and refreshing, but also is a comfort food. I always try to bake grain-free, which is great if you have allergies or are simply trying to avoid grains!
