A muffin that won’t give you a muffin-top. Sign me up! I love muffins. Egg muffins, savory muffins, sweet muffins. They are so easy to just grab’n go. And they are the perfect size! I find that when I bake loafs, I cut myself a huuuuuge (Donald Trump voice) slice, whereas a muffin is already a perfect serving size! Lemon poppyseed is one of my favorite muffin flavors. It’s really light, airy, and refreshing, but also is a comfort food. I always try to bake grain-free, which is great if you have allergies or are simply trying to avoid grains!
Hazelnut’s are so delicious – especially when dry roasted and ground up with chocolate. Now we’re talkin’. I’ve always been a huge fan of refined sugars. Not because of what they do for my body or make me feel (i.e. like crud), but because I looooooove chocolate and candy. After completing my first Whole 30, I got to see how I felt when I wasn’t eating sugar. Needless to say, refined sugar and I are officially breaking up. Call TMZ. Latte’s of any sort make me happy. I’m always trying new things and new recipes. My most recent experiment was a matcha latte with coconut milk. I am currently on the Whole 30 and dairy is not allowed; therefore, I used coconut milk. You are more than welcome to use almond mylk with this recipe if you are not a fan of coconut! A perfect snack at work, school, post- or pre-workout… really for whenever! It also makes for a dessert or smoothie topper haha. Take note that these babies take about 3 hours to cook. It’s actually kind of nice because once you get them in the oven you can go about your day for 3 hours. A few key notes about this recipe: Lemon Juice: I dip the banana coins in fresh lemon juice before putting them on the parchment paper. Homemade almond mylk is one of my favorite things to make – especially due to it’s secret ingredients. Plain almond mylk is delicious, but I like to add nutty and caramel notes to mine. Almond mylk is great for so many things. Cereals, latte’s, smoothies, or plain jane! It is thick and creamy, similar to cow’s milk, but so much better for you. I make big batch’s of this weekly and Sam and I devour it! Feel free to mix this recipe up! I add two dates for a little sweetness and it adds a hint of caramel – delicious!
Chicken soup is a staple for Sam and I. It is so nourishing for our bodies, it is easy to make, and something about it just makes me feel super cozy! This is a great meal prep recipe. I make a lot of it and then Sam and I eat it for lunch and dinner for the next couple of days. Continuing on with my gingerbread obsession, specifically with Wild Friends Gingerbread PB. Seriously guys, if you haven’t tried this stuff yet, I highly recommend it. It is so delicious spread on toast, in your oatmeal, in a smoothie, in my Gingerbread Cookies, and of course, in this granola 😉 Granola clusters are my weakness and this granola is loaded with them. The perfect breakfast accessory (or plain), crunchy, and so warm with spices. The perfect addition to the holiday season! Enjoy! Holy Christmas, I have struck gingerbread GOLD! These cookies are everything. A Christmas party right in your mouth. Molasses, ginger, cinnamon… warm, light, and fluffy. These cookies are pure perfection. I have been trying to think of a recipe that included peanut butter so that I could incorporate my Wild Friends Gingerbread PB… but I didn’t want the cookies to be dense. Solution? Almond flour. The best part of winter is making rich hot chocolate! Only downside is that often times hot chocolate is very high in calories, sugar, and fat. Eeek. Luckily, I have found the best *pure hot chocolate recipe that is still very rich, creamy, and chocolatey! I topped mine with CoCoWhip by So Delicious. It is dairy free, non-GMO, gluten free, vegan, no hydrogenated oils, and zero trans fat. WINNING! It has a coconutty taste, too, that has me wanting to swan-dive into the container. I love the taste of peppermint so I added some crushed candy cane on top of mine.
