Latte’s of any sort make me happy. I’m always trying new things and new recipes. My most recent experiment was a matcha latte with coconut milk. I am currently on the Whole 30 and dairy is not allowed; therefore, I used coconut milk. You are more than welcome to use almond mylk with this recipe if you are not a fan of coconut! It’s actually kind of nice because once you get them in the oven you can go about your day for 3 hours. Homemade almond mylk is one of my favorite things to make – especially due to it’s secret ingredients. Plain almond mylk is delicious, but I like to add nutty and caramel notes to mine. Almond mylk is great for so many things. Cereals, latte’s, smoothies, or plain jane! It is thick and creamy, similar to cow’s milk, but so much better for you. I make big batch’s of this weekly and Sam and I devour it! Feel free to mix this recipe up! I add two dates for a little sweetness and it adds a hint of caramel – delicious!
Chicken soup is a staple for Sam and I. It is so nourishing for our bodies, it is easy to make, and something about it just makes me feel super cozy! This is a great meal prep recipe. I make a lot of it and then Sam and I eat it for lunch and dinner for the next couple of days. Continuing on with my gingerbread obsession, specifically with Wild Friends Gingerbread PB. Seriously guys, if you haven’t tried this stuff yet, I highly recommend it. It is so delicious spread on toast, in your oatmeal, in a smoothie, in my Gingerbread Cookies, and of course, in this granola 😉 Granola clusters are my weakness and this granola is loaded with them. Holy Christmas, I have struck gingerbread GOLD! These cookies are everything. A Christmas party right in your mouth. Molasses, ginger, cinnamon… warm, light, and fluffy. These cookies are pure perfection. The best part of winter is making rich hot chocolate! Only downside is that often times hot chocolate is very high in calories, sugar, and fat. Eeek. Luckily, I have found the best *pure hot chocolate recipe that is still very rich, creamy, and chocolatey! I topped mine with CoCoWhip by So Delicious. It is dairy free, non-GMO, gluten free, vegan, no hydrogenated oils, and zero trans fat. WINNING! It has a coconutty taste, too, that has me wanting to swan-dive into the container. I love the taste of peppermint so I added some crushed candy cane on top of mine.
I love eating dates. They are the perfect pick-me-up snack during the day. My favorite way to eat them? Stuffed! Dates are full of magnesium and potassium, which are amazing at lowering cholesterol and blood pressure.
