Are there any vegetables that you have never cooked with? Eggplant is that vegetable for me. I don’t think I’ve ever even noticed them at the grocery store. But a few days ago, I walked into Kroger and it was eggplant mania. They were on sale and Kroger needed to get rid of them, so I helped them out. Only problem, I was stuck with like 4 eggplants and I had no idea what to do with them. Let the brainstorming commence…I decided to use the leftover basil from my Tomato Basil Quinoa Salad and this is where it got me.
Popcorn is always a go-to snack for me. I absolutely love it! However, I hate when it is soaked in butter and salt. It makes me feel groggy and slow after eating it. Not willing to give up my favorite snack, I figured out a healthier alternative! Brown bag popcorn. It’s as easy as it sounds. Simply throw popcorn kernels, oil, and whatever seasoning you prefer into a brown paper bag. Put the bag into the microwave and voila! Happy Monday! Here’s an awesome recipe to help you kick Monday’s rear end. I have been meaning to post a protein ball recipe for awhile now. Pumpkin pie flavor seems to be appropriate due to the season and my serious obsession with pumpkin! These are really quite delicious. They have a cakey texture to them and a little bit of crunch from the cacao nibs. Best of both worlds!
