The BEST Carrot Cake Cupcakes

I’ve been on a little baking kick this week. Carrot cake is my favorite dessert of all time. It is so rich, moist, and I love the different textures. The 7-layer carrot cake from Mitchell’s is to-die-for. Sam and I always get it whenever we go there or when we are celebrating something. Considering that that cake is 7-layers of straight sugar, I decided to recreate it and ohhhh man… I think I nailed it. Sam took a bite, looked at me, and said, “These are way better than Mitchell’s, I promise.” SUCCESS. The mixture of carrot, coconut, and cinnamon is

Raspberry Chocolate Chip Muffins

I honestly don’t even know where to begin with these. I haven’t baked in awhile and I absolutely love it, so I thought these sounded easy and yummy. My expectations were not high at all, but oh. my. gosh. I think this is my best recipe I’ve ever created (other than the carrot cake cupcakes I also just made. I am on a ROLL today!). These muffins are moist, but crunchy on the outside. The warm raspberries literally explode in your mouth. And then there is the decadent dark chocolate. Like, dayyyum. I’ve been eating them alllllll day. They taste

Roasted Chestnut Hot Chocolate

It is January, which means the #Whole30January is in full swing! This is something that I like to do every year. The Whole30 has seen some controversy recently, but coming from someone who has done 3 times now – I love it. It is described as a ‘nutritional reset’ and that is exactly what I need after the holidays. I feel so good after completing it. My skin glows, my hair is shiny, my energy is through the roof, and it has helped me keep my sweet tooth in check (big win for me!). I am also quite the wine

Rawtella

Hazelnut’s are so delicious – especially when dry roasted and ground up with chocolate. Now we’re talkin’. I’ve always been a huge fan of refined sugars. Not because of what they do for my body or make me feel (i.e. like crud), but because I looooooove chocolate and candy. After completing my first Whole 30, I got to see how I felt when I wasn’t eating sugar. Needless to say, refined sugar and I are officially breaking up. Call TMZ. I still need my chocolate fix though, so I turn to cacao. Many people get “cacao” and “cocoa” mixed up –

Flourless Gingerbread Cookies

Holy Christmas, I have struck gingerbread GOLD! These cookies are everything. A Christmas party right in your mouth. Molasses, ginger, cinnamon… warm, light, and fluffy. These cookies are pure perfection. I have been trying to think of a recipe that included peanut butter so that I could incorporate my Wild Friends Gingerbread PB… but I didn’t want the cookies to be dense. Solution? Almond flour. The almond flour brings a nutty flavor to the cookie and made it LIGHT AS AIR. You know how Krispey Kreme doughnuts are so light that it feels like you’re eating air? THAT’S WHAT THESE

Healthy Hot Chocolate

The best part of winter is making rich hot chocolate! Only downside is that often times hot chocolate is very high in calories, sugar, and fat. Eeek. Luckily, I have found the best *pure hot chocolate recipe that is still very rich, creamy, and chocolatey! I topped mine with CoCoWhip by So Delicious. It is dairy free, non-GMO, gluten free, vegan, no hydrogenated oils, and zero trans fat. WINNING! It has a coconutty taste, too, that has me wanting to swan-dive into the container. I love the taste of peppermint so I added some crushed candy cane on top of mine.

Nutella Cookies

Nutty, roasted hazelnuts paired with decadent, smooth dark chocolate. The best combination known to man. I love to spread Nutella on just about anything. My favorite is in-between a warmed croissant, with a cup of coffee, watching a Christmas movie. Ugh, yes pleeeeease! If you share this love for Nutella, then boy do I have a treat for you! I’m not vegan, vegetarian, or strictly raw, but I do love to try and eat that way as much as possible. Don’t get me wrong, nothing beats a juicy steak or a grilled chicken wrap. But when I eat mostly plant-based foods, I

Cranberry Muffins with Orange Glaze (Grain Free!)

Happy first of November!! Eeee my excitement is through the roof! I absolutely love the Holiday season and for me, November 1st kicks it off So, why not accompany this special day with a delicious muffin? Plus, it is Sunday – aka National Baking Day aka THE BEST DAY EVER. November makes me think of cranberries. I love the tart flavor that they have. Funny fact about these glossy, scarlet red berries is that they bounce! They contain air pockets in them, which causes this and is also the reason why they float in water (which is a really pretty centerpiece

Raw Chocolate

National. Chocolate. Day. Also known as every woman on planet earths favorite day (I’m assuming). Anyone who knows me well knows that I have one of the biggest sweet tooths you’ve ever seen! I’m constantly shocking Sam with how much sugar I can consume (not proud of that). Chocolate is my favorite, so creating the perfect raw chocolate recipe was a must. I’ve always loved dark chocolate, beware that this is a little bit more bitter than the milk chocolate you would pick up at the store – but man oh man is it delicious. Toasted coconut and toasted almonds

Sweet Potato Brownies

It’s Monday so that means… brownies for breakfast, anyone?! Why not start the week off with some chocolate? I’ve already had 3 this morning. Is that bad? I don’t even care, these are too good to pass up at anytime time of the day! Made with clean ingredients, but taste just like a buttery, sugary brownie. Win-win! I never tell Sam what is in the food that he is taste testing for me until I get his reaction. More often than not, he enjoys them and then enjoys them even more when he learns what the ingredients are! He is
