Happy Sunday! Sunday’s are usually my day to meal prep and grocery shop. Sam and I both are up around 5am for workouts and then immediately start our day. We go-go-go until 6pm, so it’s super helpful for me to always meal prep. Otherwise we would be living off of poptarts… which doesn’t actually sound so bad… There are so many delicious meals that I make that don’t require a “recipe”. For instance, avocado with cottage and olive oil. Not really an in depth meal/snack that I would make an entire recipe post for, ya know? SO, I’ve decided to
A muffin that won’t give you a muffin-top. Sign me up! I love muffins. Egg muffins, savory muffins, sweet muffins. They are so easy to just grab’n go. And they are the perfect size! I find that when I bake loafs, I cut myself a huuuuuge (Donald Trump voice) slice, whereas a muffin is already a perfect serving size! Lemon poppyseed is one of my favorite muffin flavors. It’s really light, airy, and refreshing, but also is a comfort food. I always try to bake grain-free, which is great if you have allergies or are simply trying to avoid grains!
Continuing on with my gingerbread obsession, specifically with Wild Friends Gingerbread PB. Seriously guys, if you haven’t tried this stuff yet, I highly recommend it. It is so delicious spread on toast, in your oatmeal, in a smoothie, in my Gingerbread Cookies, and of course, in this granola 😉 Granola clusters are my weakness and this granola is loaded with them. The perfect breakfast accessory (or plain), crunchy, and so warm with spices. The perfect addition to the holiday season! Enjoy!
