I’ve been on a little baking kick this week. Carrot cake is my favorite dessert of all time. It is so rich, moist, and I love the different textures. The 7-layer carrot cake from Mitchell’s is to-die-for. Sam and I always get it whenever we go there or when we are celebrating something. Considering that that cake is 7-layers of straight sugar, I decided to recreate it and ohhhh man… I think I nailed it. I honestly don’t even know where to begin with these. I haven’t baked in awhile and I absolutely love it, so I thought these sounded easy and yummy. My expectations were not high at all, but oh. my. gosh. I think this is my best recipe I’ve ever created (other than the carrot cake cupcakes I also just made. I am on a ROLL today!). I got home from my workout this morning and had leftover pumpkin from a recent recipe (coming soon) and couldn’t help but make pumpkin pie oatmeal. I never get sick of it! Smoothies should be a staple in every household. They are quick, nutritious, easy to make, and perfect for on-the-go. You can hide so many greens in smoothies, but still have it taste like dessert! I love to add protein powder to all of my smoothies because I hate drinking just protein powder + water. I like the consistency to be a bit thicker and with more substance. When I was modeling in Chicago, of course I was all about the low-carb options. “Yes, I’ll have egg whites and tomatoes, please!” So boring. A muffin that won’t give you a muffin-top. Sign me up! I love muffins. Egg muffins, savory muffins, sweet muffins. They are so easy to just grab’n go. And they are the perfect size! I find that when I bake loafs, I cut myself a huuuuuge (Donald Trump voice) slice, whereas a muffin is already a perfect serving size! Lemon poppyseed is one of my favorite muffin flavors. It’s really light, airy, and refreshing, but also is a comfort food. I always try to bake grain-free, which is great if you have allergies or are simply trying to avoid grains!

Here in Michigan, it has started to get cooler. Today was especially a little nippy and nothing sounded better than a big, warm bowl of chili. I make mine with bison for a few reasons. First off, turkey can get old sometimes when you constantly sub it for red meat. Plus, I really like red meat! Bison is the leanest type of red meat you can buy, so I love to cook with it. When my man asks for banana bread, he GETS banana bread! I think banana bread is a staple in every household, so finding the perfect (and healthy!) recipe was a top priority.
