Greek Frittata

Breakfast is my favorite meal because there are so many possibilities. Oatmeal, eggs, toast, savory, sweet, and let’s not forget about the coffee. I love mediterranean inspired dishes, so this egg dish was a real winner. Perfect for meal prep, too! It lasted us about 4 days and I even had a slice for lunch one day. Packed with protein, iron, and veggies – this dish is the perfect jumpstart that your body craves every morning. Paired with some fresh fruit and flaky croissants. Absolutely divine!  Wolfed this down pretty quickly. Enjoyed around the dining room table with my whole family. Doesn’t

Glowing Green Smoothie

Happy Monday, good morning, and MERRY CHRISTMAS! Thanksgiving is over, which means it is officially time to listen to Christmas music 24/7 and have Christmas movie marathons. EEEEK! I freaking love this season. The cozy sweaters, crackling fire, hot chocolate (amazing recipe coming soon), and your loved ones all in the same house! Life. Is. Good. I hope your weekend was filled with lots of laughter, love, and shopping! And some quality sleep 🙂 After a delicious Thanksgiving meal(s), I’m in need of a refreshing green smoothie! This is my favorite recipe. Simple and super creamy. Smoothies are great to

Today’s Clean Meals (+ Workout!)

I got a lot of positive feedback after posting What I Ate Today (Detox), so I thought I would go ahead and make another post about my clean meals from today! Not going to lie, eating clean, wholesome foods all of the time can get tiring for some, including myself. However, if you stick to it, your body will thank you in so many ways. More energy, glowing skin, lean body, happy spirit! I also included my workout routine from today. It was a tough one, but I sure needed it! After being sick in bed for 3 days, you

Loaded Lentils

This delicious soup reminds me more of a stew rather than a soup. Packed with so much goodness, I can hardly stand it! So tasty. So nourishing. Ugh! I love it. Lentil soup is one of my favorites. I have been fighting a nasty virus and this dish is exactly what I’ve needed. Hippocrates hit the nail on the head: “Let food be thy medicine.” Lentils are rich in many vitamins and minerals, but are known for their high amounts of protein, fiber, folate, and iron. I’m all about a high-protein diet and 1 cup of cooked lentils contains 18 grams of

What I Ate Today (Detox)

WHEW! has it been a crazy busy week for me! Going, going, going, non-stop. Almost everyday this past week, I got home and did not feel like cooking. Which means, I didn’t! Instead I chowed down on whatever was handy (i.e. chips, frosted animal crackers WITH peanut butter (my muse), pizza). These things shouldn’t even be in my house! Needless to say, my body hated me for it and I could tell by the way I felt and looked. Time. to. DETOX. The word “detox” means different things to different people. To me, it means consuming raw vitamins, lots of veggies,
