Happy First Day of Autumn! Bring on the brisk air, cider & donuts, changing leaves… Fall is such a vibrant season. The tastiest recipes come in the Fall, too. This recipe is one you’re going to want to have weekly. Sam and I are finally getting into a routine that works for us. 6am workouts, 8am studying/eating, working from 10-6, and then dinner and more studying! Fall is [kinda] here! My favorite season ever. The smells, the weather, the beauty. Everything about Fall is just perfect. I got home from my workout this morning and had leftover pumpkin from a recent recipe (coming soon) and couldn’t help but make pumpkin pie oatmeal. I never get sick of it! I added 2 egg whites for added protein, PLUS it makes the oatmeal super fluffy. You’re going to want to whip this up STAT.
When I was modeling in Chicago, of course I was all about the low-carb options. “Yes, I’ll have egg whites and tomatoes, please!” So boring. Eating such boring food all of the time is what sparked me to create recipes that are healthy, [sometimes] low-carb, and still delicious! I present to you… low-carb pancakes. Hold the applause. Happy, happy Spring! I was taking a walk earlier today and the sky was so vibrantly blue, the birds were chirping, and as I took a deep breath in, I remembered that today is the first full day of Spring. Hallelujah. Spring typically brings motivated, energetic feelings. The birds start singing, the seeds start sprouting, the horses start frolicking (which is super annoying when you’re trying to catch them haha), and people start getting excited about life again. A perfect snack at work, school, post- or pre-workout… really for whenever! It also makes for a dessert or smoothie topper haha. Take note that these babies take about 3 hours to cook. It’s actually kind of nice because once you get them in the oven you can go about your day for 3 hours. Chicken soup is a staple for Sam and I. It is so nourishing for our bodies, it is easy to make, and something about it just makes me feel super cozy! This is a great meal prep recipe. I make a lot of it and then Sam and I eat it for lunch and dinner for the next couple of days. January is almost here! Which means #Whole30January is about to start. Eeeek, I’m so excited! Many people have been asking me what the Whole 30 is, why I’m doing it, what’s the point of it, etc. To be honest, it is similar to the Atkins diet and completely correlates with the Paleo lifestyle. BUT it is only for 30 days. The point of this “diet” is to completely cleanse your system of toxins, heavy metals, candida (too much sugar), and raise your energy levels.
